There's a general view that at least some of the structures were carved out over 2500 years ago; geologist and fringe author Robert Schoch has suggested that they were begun long before that, as shelter against solar phenomena that he blames for the ice age.

Some homes that are built over cave complexes have entrances into them via their basements. I’m sure that sort of thing has been going on for as long as there have been man-made structures.
