The Best Thing I Ate This Week: Where Burger Meets Taco

I first saw Pour Vida’s "Anaheim-style burger taco" in my Instagram feed. Despite sounding like something Taco Bell might have dreamed up, I couldn’t get it out of my head. I had to have it.

Pour Vida is chef Jimmy Martinez’ gourmet taco stand in Anaheim. And the picture he posted on Instagram showed a handmade flour tortilla completely glazed with melted yellow cheese, which was then topped with a pan-fried clump of hamburger meat, a flurry of shredded lettuce, some more cheese, a slice of tomato and Thousand Island dressing. It was a work of art.

So I went there and ordered it.

It wasn’t exactly ugly. Tacos rarely are ugly. But what emerged from the kitchen looked nothing like the social media advertisement. A tiny glob of cheese clung to this tortilla. The hamburger meat was crumbled and loosely scattered. The tomato was MIA.

It doesn’t look all that appetizing to me. It might taste OK tho.

I used to really like Taco Bell tacos tho I don’t guess I have had one in 30 years or even longer. If they had left the sour cream off them it would have been much less tasty.

One ugly taco. Here is my recipe:
Take skirt steak and marinate in a combination of pressed garlic, soy sauce, and orange juice from a fresh orange, and a little lemon juice. Allow to marinate for an hour. Remove meat and toss marinade, then grill over mesquite until medium. Set aside and heat fresh corn tortillas over the same coals until warmed. Chop meat coarsely and place unto tortillas. Sprinkle meat with fresh lime juice, a little Kosher salt, and top with diced onions, diced tomatoes, minced cilantro and diced avocado. Top all that with a hot sauce of your choosing but I prefer homemade, which takes a while, so use whatever else you want. Divine…..

My late wife used to make great enchiladas. A few years ago I tried to make them myself but could not remember all the ingredients.

I phoned my Daughter to see if she had the recipe. She had it she thought but when she read the list of ingredients, I realized it was not the same.

I do remember my wife would make me grate the Monterrey Jack cheese. Also that you had to use a can of tomato soup, chopped black olives, chopped onions, corn and flour tortillas, some other cheese and a few other things, but just can’t remember what else.

Omaha Filet Mignon rare on a roll with American cheese. Cook after you use the extra Dry Ice to fill a few 2 liter Coke jugs and hang them from the Maple tree out back so nobody gets hurt.

All in a days meal.

In Minnesota the Muslims now want McDonald’s to make a
MacCamel burger. How bout that?

I guess you’ll have to walk a mile for a MacCamel

Good food takes work. Did not your mother or father make you dinner? Food preparation takes time, and buying it at a fast food place only shows one aspect—paying for the meal. They did the work which you do not see. Invest the time—better and cheaper. Your call....

We used to have a taco burger at the local drive-in. It was half a hamburger patty in a fried corn tortilla, it was great.

Making good food is an art.

My Mother used to make great fried chicken and all of us children loved it. I remember visiting Mother and Daddy when they were in their 80s and her chicken wasn’t as good.

I mentioned it to Mother and she said she knew it wasn’t but did not know what she was doing differently. I suppose the quality of the ingredients may have gone down or Mother may have just lost the touch.
