NATIONAL HOMEMADE SOUP DAY – February 4th

National Homemade Soup Day is observed annually on February 4th.

Before the era of modern transportation, soup was a product of regionally available foods. For this reason, there are thousands of soup recipes available today.

Many soups also have medicinal purposes. What was once considered a wives’ tale, chicken soup now has the backing of the scientific community with helping relieve the symptoms of the common cold. Scientists believe that a bowl of the soup may reduce inflammation of the lungs. It is thought that chicken soup slows down the activity of white blood cells that can cause the inflammation.

Back in college, many years ago, my brother and I would make Dead Week Soup. (Dead Week was the last week before finals, when we would be cramming ferociously to try to make up for all the party time.) We’d use a whole chicken and all of the remaining vegetables in the house, plus oatmeal to thicken it. Make a soup, then portion it out into all of the pint cottage cheese containers, and we had nourishment that took almost no time to heat up.

Yes, Hispanics have old hens. They’re puny like an old bony cat but supposed to have superior flavor when it comes to chicken stock. I’m not sure about that but they come with feet which do add body. I think health and safety is so overrated!

Well, glad I’m not the only one that has used that soup method! I do make other planned soups but that is the most frequently used “recipe”. My husband calls it ‘saved from the disposal’ soup. Ha! Doesn’t sound very appetizing. I don’t have 14 to feed but 9 isn’t bad! I do give leftovers to my parents that care for my grandma so it reaches 12 on occasion!

ping and also to #64. I'm going to try it with a little adjusting for things we don't have or what sounds like would be good in it.

There is a Serbian bean casserole made with hot coals, home-made fried sausage and lots of paprika and roasted red pepper juice, other ingredients, no dumplings though. Looks so good, will try my Myocoba beans instead of the white ones which look like cannellini or however it is spelled.

I was wondering if I could buy some frozen gnocci for the dumplings. My local store does have different versions of those. A copycat Olive Garden chicken soup recipe features those.

The wife is always trying new recipes for soups - some of my favorites have ground beef, beans and greens with some onions/celery/carrots and maybe even some Rotel.

A great thing about sou is that you can make a big batch and freeze some for later.

No sausage in my Mom’s version. But I’m sure you could improvise other ingredients and come up with something great.

Actually, I buy the prepared stock from my grocer because it works for me (and I trust the product) .. and with a leg injury and a sometimes swollen ankle and foot (metal plate/Yuge bolt), standing in the kitchen is just not a FUN thing to do .. but I still love to cook; especially homemade soup.

So, I try to make cooking as enjoyable as possible .. and spend as little time as necessary standing in the kitchen.

And thanks for the comment about using the stock water when making rice. That’s a great idea. My wonderful neighbor, just gifted me with a rice cooker, and the rice .. so now I have your suggestion to add to the treat. Thanks.

My daughter has that ankle problem from serious injuries from an accident in 1988. Her right ankle has several screws holding it together. If she is on her feet very long, it swells along with her leg.

She tries elastic wraps and support hose and watches the salt. There's not really much else that can be done about it.

It's her right ankle although she still has a steel rod in the femur of her left leg, also has a cap over a quarter-size hole in her forehead where she punctured her skull and has some brain damage.

Best wishes to you in your struggle. Years ago we met a hospital clerk who had a similar injury to her ankle which was really negatively impacting her life. She said she prayed to St. Therese the Little Flower and it was either healed or the pain alleviated and her mobility vastly improved.
