Weekly Cooking (and related issues)Thread

Dear Cooking-Thread Friends;

A very dear relative of mine has become quite ill, and I will be caring for him for the foreseeable future. I expect that things will be turned a little ‘upside-down’ here for a while, and I won’t be able to continue the weekly posting of this thread. I will resume when I am able, but in the meantime we can just continue this thread. I will check in when I can.

Alternatively, if anyone would like to take up the thread in the interim, the ping list is on my profile page.

My current patient is now getting his appetite back somewhat, after a stint in the hospital; and today he was reminiscing about Shrimp Scampi – his recipe for which, according to his tale, greatly impressed many young lady friends, back in his salad days. Here is Taste of Home’s version:

Wow, I could imagine that. Never tried to cook rice like pasta. Making pasta is tiresome now because we only use the gluten free (fave brands Target and Barilla, some others really suck). So you do have to constantly stir to make sure you don’t end up with it stuck all together.

I still adore my rice cooker. With coco water. Mmmm.

A friend gave us some lemons so here’s a tip - before cutting them up so use, zest them. Set the zest on a plate to dry naturally. Same with oranges, limes, etc. Store the dried zest in a spice bottle. FREE zest!

Hey, I threw my thanksgiving turkey carcass from the freezer into the crock pot yesterday, with spring water and a bit of apple cider vinegar, to make bone broth for tonight. Last night before bed I took out half the bones to make room, added leeks and carrots, and continued slow cooking. It smells good in that kitchen today.

Tonight will add chicken and veggies and rice. Bone broth soup!

Trying to think about artichokes and pee. I know asparagus makes pee smell. So artichokes do it too?

I do that heavy rinsing of rice too. I use a big strainer, with running water and hands in it. Kids love to do this. It feels really good on the hands.

Omgosh!!!

This is great! My mom loves pecan pie and I can’t eat tree nuts. This is a great idea to make this for her! She will love it and I can have a taste. I am going to try this recipe. So cool, thanks.

Oh, I am making that. I love greens. And we can use turkey bacon to make it kosher (by the way, with turkey bacon, add more fat to the pan, it’s too lean). Thanks for that, it is making me hungry. Killt greens. Love it. (I have to double kill dandelion greens because they are so bitter, but they are worth it.)

What is going on??? All these recipes are hitting my cooked veggie craving today!!! Another one I need to make. Please Gd let me get well; I need to get cooking. I agree that this one is so beautiful as well as healthy.

It did seem that JT aimed for pre-weekend for the ability to focus on cooking for joy more. I’m happy to trade off with you, sure. Let’s keep it going! And this seasonal trend is so important. I love all these healthy warm veggie recipes this week.

Threw a ham bone from the freezer into the pot of pinto beans last night, yum.

Another tip (not to Yaelle who’s eating healthy, ;)) - save the crumbs in the bottom of potato/corn chip bags in the freezer for use later on a casserole.

Also, when you get a box of crackers that’s all crumbs (just had one), don’t toss it. Use the crumbs in a meatloaf or meatballs, etc.

Or - you can make your own broth! No hint of rosemary? My crock is going right now and the smell is killin’ me! HOURS to go...

I researched nut allergies.

Some nuts aren’t nuts at all...they are seeds that are sold as nuts.

Nuts fall into four nutritional/botanical categories of legumes.

Some categories can be eaten w/out ill effect....and some cannot.

For example, I have no problem eating peanuts, pistachios, almonds.

Ooh, your squash recipes look delicious, especially the penne w/ anchovies. I love anchovies & eat them out if the jar. So good ; )

I also agree that roasting veggies really brings out their flavors. I had a frozen piece of marked down flank steak that I thawed yesterday. I made an Asian Marinade, cut the steak into thin strips & popped into the fridge last night to get flavorful & tender. It only takes a few minutes to saute the beef & then thicken w/ a beef broth/cornstarch mix. I will just pull the roasted onions & carrots out of the oven......put rice in bowls, put beef & sauce on top & then top w/ the veggies. Easy Sunday night dinner!

Bgill, this hits me right where I live!! My big sons always have chip bags and throw away the crumbs! And we need gluten free “breadcrumbs” to top casseroles and potato chips are perfect! Now I will tell everyone to save them and I will collect them for topping gratin potatoes and broccoli etc! Great idea.
