Siri only activates by either holding down the home button on the iPhone/IPod, clicking the Siri icon on the Mac, or by saying "Hey Siri" which recognition is processed locally before making a connection to the cloud super-computers for the rest of your request. With Apple's Siri, unlike Amazon Echo, nothing is permanently recorded.
