Thank you very much. I enjoyed the article describing the various Cocoa powders. I used to use Droste Cocoa in my cakes and biscotti, but I can no longer find it. My local H.E.B. has a Dutch Processed Cocoa I use, but it's really not the same.

I ordered Black Cocoa from King Arthur's this evening. I am looking forward to trying the Naughty Cookies with my granddaughters.

Hershey’s Special Dark was touted on America’s Test Kitchen. I guess when you can get that Kimbell guy to smile, it must be good. I use it now.
