Anyway, all the hypersensitivity! I’ll wager there are gas & electric stoves/ovens found in kitchens all across Mexico. Are those a cultural invasion, too? Should authentic Mexican food be cooked only in a clay chiminea?

My cast iron collection is quite complete - including a cast iron tortilla skillet.
My Messican pals use ‘pocho’ to disparage each other. They use it as if it means ‘inauthentic wannabe Mexican’.

Electric burners ARE tortilla toasters.
Set the sucker on 3, slap on a tortilla and wait thirty seconds at the most. Turn once. Done.

Tortillas are the bread of the American Southwest.
My non-Hispanic wife uses them for evening snacks, along the lines of a simple cheese quesadilla.
Fortunately I can get fairly authentic Mexican style food, at my local El Pollo Loco.
My sister in law was staying with us and I cooked something up in the Cast Iron skillet. I went outside to clean the grill, when I came back by beloved CI skillet was in the sink of hot soapy water and being scrubbed by my S-I-L.
I blurted out: "What are you doing??????????????"
In her typical 'blonde' fashion she said: "I'm cleaning your pan, it was filthy. Don't you ever clean it?"
She hasn't been invited back
