I should have mentioned it was a clothing store. There is a pile of bags with the store name on them next to the cash register. If you count them before the store opens, and then again afterward, you have an idea how many sales there were. Then if the number of bags left over after the store closes doesn’t match the credit card sales, which are always recorded, but is much less, you know there were a lot of cash sales going on. The amount cash in the cash drawer before and after would of course always be checked as well.
As he guessed, there was massive theft going on.
It’s possible someone bought so much stuff she needed two bags, but it wasn’t that kind of store. It was expensive and boutiquey.
