The article says that Tapatio, Cholula, La Victoria, and El Yucateco are the only ‘acceptable’ hot sauces. I’m wondering what the folks here consider favorites.

I guess I do too. We have one supposedly authentic Mexican place in my neighborhood and I've never had a good meal there. Diana Kennedy's
Cuisines of Mexico is supposedly the last word on authentic, updated several years ago.
We have two Mexican (I think they are accurately called Tex-Mex) nearby, one with a mariachi band and one without. Guess which one is better.
