Hot beets are good with a lot of butter.
Cold beets are good with a lot of vinegar and onions.
I normally ‘restrict’ my veggie intake to potatoes(?), corn and green beans at times.
Seems like butter, salt and pepper are a common demoninator when it comes to veggies.
My theory is that I am a BEEF eater and cows live on grass and grass byproducts SO the cow eats my share of greens and passes it along.
Of course, I once heard that a pile of horse apples would taste somewhat decent if enough hot sauce, garlic, vinegar and pepper were used.

I hate beets! When I was a young teenager, I entered into a beet standoff with my mom. She wouldn't let me leave the dinner table until I ate the damn beets.
It went on for over an hour until my mom left the kitchen to go to the bathroom. That's when I made my break and bolted out the side door...I think they finally gave up looking for me.
