My Mother made the best fried chicken. One day when she was around 80 I asked for her recipe. She rolled the pieces in flour with salt and pepper.

She fried it in lard. She did get the grease pretty hot. She also did not get it quite as crispy as most.

Awesome fried chicken is totally easy. The recipe is so simple yet everyone thinks it’s some ancient grandma secret. Gads!

I would cut up the chicken— learned when I was about ten— then I was trusted to grill it (BBQ) but not to fry it in Crisco in the electric skillet.
Mom did the chicken-fried chicken.
Dad was busy shooting communists.

That’s my recipe too, except I mix the flour with corn meal. Hotter than sin, then simmer.

Your mother was right about using lard. . .more healthy than the vegetable oils of today.
