Edible bug industry hopes crickets and kin are the next sushi

Just like raw tuna is a favorite of foodies everywhere, Robert Nathan Allen foresees a day when crickets will make their way onto consumers' plates.

A growing need for more food sources as well as a desire to treat animals more humanely have proponents predicting entomophagy, or eating insects, will eventually spread more heavily to western and developed countries. They envision pancakes made with cricket flour or falafel chocked full of mealworm goodness will be just as desirable as sushi.

This statement is illogical. Pancakes and falafel are made with wheat, not animals. Why replace wheat with crickets?

I’ve tried crickets and grasshoppers. Don’t like them. They taste like pressed lawn pellets.
17 years cicadas harvested while they’re still soft, on the other hand, actually do taste a little like shrimp.

Yup.

There will be few staged photo sessions of the Lear Jet Leftists noshing on insect snacks but they will go right back to the Wagyu beef and caviar soon after the masses are dining regularly on termite paste tortillas.

Crickets, grasshoppers and bees are actually quite delicious when sautéed in soy sauce, sugar, and sake, and other flavorings.

There is no better tasting clam than the fried body meat of a geoduck. That is a commercially grown one in the photo, I’ve dug up ones twice that size - they can live 150 years.

My kid brother and I used to eat all that stuff just for fun and to one-up each other. We thought crickets and grasshopper tasted like string. Not a very pleasant source of protein!

Wild rabbit was actually quite tasty and gamey, just a little stringy. I drew the line at crows because I knew what they ate. My kid brother ate them anyway.

Grubs weren't bad either. We liked them best sauteed in garlic butter, but not quite as good as escargot (snails).

Ants varied according to where you got them. Those in clover and alfalfa patches were sweet and tasty. Those in sandy or dry areas were blah!
