Five years ago, I would have said that you would probably be safe on such a journey. Now, I wouldn’t recommend it without going as part of a group (and probably not at all). Merkel’s Madness has been a game changer for Europe.

As usual with these types of “projections”, benefits consist of unproven hypotheticals, that are nearly impossible to actually measure.

As I implied before, the answer for the safety problems of cyclists is to learn to ride properly and legally. Forester's book on Effective Cycling is probably the best text written on the subject. I have been cycling since the 1970s using his principles and they work. But I am currently living in a county with bikeways, and they are a disaster—especially for the cyclists themselves and for pedestrians.
I'm aware of that, but I was pointing out that bike trails generally have to be (or should be, anyway) funded by means other than road taxes. It's not fair, IMHO, to have highway funds siphoned off for the enjoyment of a few cyclists. I say this as cyclist and a motorist.
Stay away from "refugee" centers and anywhere else "refugees" might be found. Drink lots of beer.

How do I know where refugee centers are? And the beer and wine are givens.
I worked with a guy who biked a lot. One day he was riding in the country and passed a farmhouse and ran into a dog and fell. He broke his collar bone. I asked him what happened and he said “the dog turned the wrong way”. He thought the dog would turn back to the house and it went the other way. I had to laugh. It didn’t seem wise to trust your health on a dog’s decision.
I was out riding in the country around here once, dog came flying off a porch to chase me. I am seeing an approaching car, dog is fixed on me. I slowly veer left and as we get to the car the lady driving stopped in the road. Dog still hasn’t noticed, running along full speed. I managed to maneuver him farther to the left and BAM collision, dog on car bumper.
Laughed all the way home.
Do it. You won’t regret it. You aren’t likely to run in to the hordes on the country roads. Not enough gibs there. The alps are beautiful. I ride a motorcycle through another part of Europe each fall. Mostly I stay in hotels but camping does look nice.
Living in Germany....I’d say that it’s fairly safe. Course, I probably would use the commercial camping sites along the way, which no one ever suggests any unsafe activity around these. Germans in the spring and summer RV all over the place with no issues. The more rural sections along the German border with Austria....you might see some minor refugee activity but it’s all rapidly decreased since the route from Greece got shut down.
