I boiled up a Chicken Thigh on Saturday, added rice and vegies to the stock and cooked it some more. Now I have two quarts of wonderful Chicken Soup in the Fridge.
I will probably get FOUR meals out of one little piece of chicken! :-)

Well, it was pretty yummy ;) I’ll post the recipe (or link) this evening.
I decided since I haven’t really felt like doing much - with this allergy/cough crud - making soup would be a good way to pass the time, and have soup on hand for this fall ;) I just hope I have enough containers :-O

Much sympathy about your allergies..I try not to think about how bad it gets when mountain cedar time somes..My allergies are here but not truly miserable yet.
I love to have soup in the freezer.
