I have not had the courage to attempt canning as of yet, - especially meat - although I did obtain the proper equipment. I’m hoping I can hook up with some ladies I know and see if they would walk me through some basics.

I’ll be happy if I can just fire up the dehydrator and get that going!

I did experiment with one of the cucs before the fridge died. I had lots of room in one of my favorite brand of pickles jars, and just sliced it into wedges and added it to the pickles in the jar. After a few days, I had one, and it was wonderful! (This is the kind of pickle that is refrigerable even before it is opened.)

I’m glad I did that, cause that’s all that is left of my cuc harvest. The others remain frozen in my hydrator. Haven’t tossed them, hoping that when I get the hydrator going I can dry them. But they might be too damaged. I don’t know. My store boughten yellow and zucchini froze too.

I did that recently and was happy with the results, also. After two weeks we tried them and they were getting pretty good, put them back and forgot about them for two months. Found them and tried them and they were about the best I ever had, very crunchy. Made some more for Christmas.

The frozen cukes might be kind of mushy when they thaw, but if you blend them up into a smoothie with a touch of honey added, it’ll feel great on a sore throat.
