Apple pie "moonshine"

I have been experimenting with making my own apple pie "moonshine". I am using 190 proof Everclear..looking for advise or maybe a recipe.

My son came up from Alabama not long ago and we made a potfull of this ‘apple pie’. He used a fifth of Everclear, a quart of apple juice, a quart of apple cider (non-alcohol), a cup of brown sugar, a cup of honey, three tablespoons of ground cinnamon, a half teaspoon ofnutmeg, all brought to a boil then removed from heat and poured into pint jars with a cinnamon stick in each and sealed. I opened one last week and found it to be too cinnamony, so I called him and he told me that was the first time he put a stick in the jars before sealing and that he will not be using the sticks in future batches. It really does taste like liquid apple pie! Drink it straight from the fridge or over the rocks ... tasty!

Your recipe is real close to ours only instead of the ground cinnamon we use the cinnamon sticks then remove before “bottling”.

I think the little bit of nutmeg made the batch so good. I use a dash of nutmeg when I bake an apple pie. ... And I think there’s some ‘apple pie’ in the fridge right now! BBL

BTW, I buy Newman’s Own Spaghetti sauce. It comes in glass jars with what I have found are reuseable lids. I remove the label before putting it in the dishwasher, then place the lid on loosely after eveything is washed nd dry. When you pour boiling water into the jars and over the lids then empty them before pouring in the ‘apple pie’, the jars seal up with a nice ‘pop’ as they cool. ... Ijust tasted an opened jar; it keeps real good! *smack*

Returning from the library and have discovered I had been under a misconception in that there are a number of hoops to jump through first to be 100% legal.

The shiners down in Dykes holler say you can drink their shine or use it in your truck. Runs the same. They put a peeled peach in theirs before they lid it. Always shakes a quick bead.
