I’ve tried that SpaceX docking simulator online a couple of times, and it is a bear. I was thinking just the opposite myself. The pilots don't appear to be doing anything - one of them sits with fingers laced together, watching it all on TV. I'm thinking "Hey, even I could do THIS job!"
They even had time to doff their space suits and change into fresh coveralls before docking, if you believe the timeline of this video... LOL
I'm glad it went so smoothly it looked easy.

The online simulator is actually supposed to be the same as the one they trained on in case they had to perform a manual docking. The whole sequence, as scripted, was an automated docking by the Dragon's onboard computer, which obviously performed per specs. They weren't kidding about it being so sensitive in zero G and no atmospheric drag. Once I rammed the station, and another time it aborted the docking procedure completely because I'd drifted so far off course I was gonna overshoot. I could probably repair their computers, but don't ask me to fly the thing. *BANG* *CRASH* *oops......* *chuckle*
