I agree with the Lyme disease/Rocky mountain spotted tick fever opinion. Failure to properly diagnose it is common but the treatment is a simple, broadbase antibiotic.
There are several infectious diseases that are rare in the US and very difficult to diagnose because most physicians are just not familiar with them.
Also, cancer could be a possibility.
You need to get a thorough check.
Nothing since 2007. I saw my doc and extensive blood work every three months for the first three years and remained Hypothyroid, although it was manageable. I just could not take anything because of my thyroid going into hyperdrive. It was awful, massive heart palps, sweating profusely, unable to eat, horrible with what I was originally diagnosed as “panic attacks”. Then complete collapse, freezing cold, unable to wake up, etc. So I leveled out to lower end of normal hypothyroid and have remained that way and can live with it. I could not with the hyperthyroid days, they were debilitating. I remember the day my doc took me off synthroid, he said, in a week you will no longer have the racing thoughts, rapid heart beat, anxiety, which was fine with me.

First thing that came to my mind after reading that was “democrat”.
You have something that is spoiled in your fridge that you are either going to at random times or you have something that spoiled in your fridge that you threw out, but didn’t clean the fridge.
Check your salad dressings and condiments for expiration dates. Think about any meats that you may have defrosted, put them in separate bags and then put back in the freezer.
Check bedrooms for fleas and bed bugs. Steam clean the house. Finally, think about what triggered the episodes. Can very well be something you thought about. Seriously, when I was younger I had a bad experience with being crowded in. Now, I cannot get into a vehicle with more than 3 people without getting cold sweats and anxiety.

Read up on what ulcerative colitis and microscopic colitis are and their symptoms. See if you can eliminate it as a cause. If not it may be a suspect. Also read up about leaky gut (permeable intestinal membrane). Then look up FODMAP foods to avoid (fructose, dairy, short chain food molecules). If you do better avoiding those foods that may be a place to start. Or try taking calcium (but not calcium oxide). That would likely make you a bit constipated but may also close up any leaky gaps in your intestinal wall cells. Colitis can go on insidiously for years and doctors seem to be blind to it. Another question: do you simultaneously have nasal histamine? That may be a marker of colitis when undigested food gets through the cracks in your gut lining and get into the blood stream creating brain fog, fatigue, drowsiness and dehydration. If none of the above, then eliminate colitis as a possibility and explore other causes.
My wife and I had 2 rounds of similar scourge in late Dec and January. We picked it up at a grade school where we eat in the cafateria for a Christmas concert.

1. Get a new doctor. I don’t know your location but there are major medical centers in every region of the US.
2. When the doctor says you are crazy, think MS and get checked thoroughly... MRI, spinal tap, etc.
I was sick and spent two weekends in different Hospitals recently. My creatinine level had gotten up to 4.7. They think that was due to dehydration from diarrhea.
However, they found 3 nodules on my thyroid. The thyroid can screw up a lot of things in your body. They’re going to do a test to determine if a biopsy is needed. Have them check your thyroid.
Right now I’ve got a cough and nasal drip they can’t figure out. Had the same thing in December.
But the big problem is the possibility of artery blockage. But my kidneys are in such bad shape the dye used when stents are placed could put me on dialysis.
My wife said “I guess that’s why they call it practicing medicine.”
Hope they figure it out and you get better.
I had my physical last month and other than some vitamin D deficiency, my numbers were really good overall. A very big improvement over the year before.
Still working on the weight loss thing. I dropped a few pounds.

Most of these are better absorbed with meals, so maybe even them out across your daily meals, a few of each category per meal.
I would at this point follow their recommendations on each bottle. Lots of good places like mercola.com may have more info on each item, and you may decide to vary your intake as your research more.
Check your cleaning products at home for something new or perhaps the manufacturer has changed the formula. Question the cleaning people at work, too. Are you in a building that is treating for bugs or rodents? Insect spray once nearly killed us all even months later. Also, we all got ill after having the carpet professionally cleaned. On a related note, new carpet and upholstery that hasn’t had time to air out is loaded with bad chemicals. Have you had your car detailed or had any chemicals in it. Stop using air fresheners or candles. New laundry detergent?
As someone above said, it may be lurking in the refrigerator. Throw out everything, Clorox it and start over. Clean the blade of your can opener. Run vinegar through the coffee maker at home and work even if you only use it to heat water. Change the filter and hoses on your ice maker.
Lead paint anywhere? Sewer gas? Freaky neighbors have a meth lab?
I’ve gotten to the point where a lot of the Monk theme is more real to me.
