Would some Catholic please let me know when this pope is speaking ex cathedra and when he’s speaking triple-x cathedra?

Well to be honest, nothing this Pope has said deals with infallibility because nothing being discussed is dealing with Dogma or Doctrine, at best what the Pope says is part of ordinary magisterium, which means instructing the faithful, but nothing he has said is collectively for the Universal Church to be held definitive and binding for all times going forward (Dogmatic Formulation). The last such Dogmatic statements reaching that level would be the Declaration on Infallibily defined at Vatican 1 Council in 1870 and Assumption in 1950 decreed via Apostolic Constitution.
