So God told Moses that He made the sun, moon and stars. Of course he was only talking to Moses and not Joe so we can't really believe it but here is a question.

Why can't we believe it? If you're trying to understand God's creations you have to look at all that God has said, not just one thing.

It also depends on the level of understanding of the audience that the prophet was writing to. Moses' version of the story of the creation isn't going to discuss molecular biology, even though the Lord created all the laws of science.

We can take this point for all the doctrines. To fully understand it just from the writings, you have to have all the Lord has said on the subject.

By stars I mean all of the galaxies or are all of these gods sharing this one universe?

I don't speculate on these things. God hasn't revealed all the laws, goings, and comings in the eternities. But He has promised to make everything known to those that receive His glory. I trust in that.

Because He is the same God who keeps telling everyone He is the only God. Then along comes Joseph Smith who gets the really true stuff.

So Mormons are content to imagine an infinite number of Gods but won't say if they are in this universe or multiple universes? Hmmmm.
