As a new Catholic it is my understanding that Last Rites is final forgiveness of sin. If the man was not willing to admit his sexual preference was a sin, then naturally the Priest would be forced to act in accordance with Church law.
A desire to engage in sodomy (with a same-sex or opposite-sex partner) is a temptation to sin, which should be resisted.
Actually doing the deed is the sin, which must be repented before a person can receive absolution and Communion.

His sexual preference is NOT the sin. Having sodomy with a member of the same sex, IS. I have a friend that I have ministered too for many years. He has a same sex attraction. His sexual preference would be the same. He has lived a life full of confusion, frustration, anxiety, depression, etc. But he has made his choice to remain CHASTE. Is he guilty of a mortal sin? Not according to the Catholic Catechism.
Didn’t Jesus commit the ‘final forgiveness of sin’ on the cross? Never understood why there has to be a priest involved - in life in the confessional and in death via last rites. John 3:16 makes it pretty darn clear - anyone who believes is forgiven.
Be careful with your words. "Preference" is not sinful. Acting upon a disordered preference is a sin.
I don't believe that a mere preference can be viewed as a sin per se.
According to Church doctine, since the Fall, Man has had an innate tendency to sin. That, alone, is not an offense against God. However, acting on those tendencies can be considered sinful.
I am not an authority on Catholic doctrine, so please forgive me if I've mistated the matter.
