Don't tell the kids but $6 million worth of breaded catfish is headed for school cafeterias. Sounds fishy to me. Everyone knows second-graders have severe standards when it comes to eating.
Fearful suspicion is cast upon all foods not found on their basic list of acceptable foods (the adventuresome eater has at least four) to ingest without anxiety or ketchup.

Yuck! I'll pass on bottom-feeders every time . . . Thats just it, we never ate them much either. Too muddy tasting. It was the same for gars and mullet where we lived. Anyway, now they have all sorts of strato-feeder catfish that will hit a plug just like a bass. And since they are raised on a fish farm, they probably use that Purina floater-food, or whatever they call it, so they dont eat on the bottom anymore. I still dont eat them much though.

You're right that catfish caught in the wild can be pretty sad on a plate. Farm raised catfish, however, is terrific. Live dangerously, give it a try.

Hey if I can guarantee the catfish hasn't been eating sh!t and garbage off the floor of a pond or lake, I might actually give it a try. Hell if you bread something, deep-fat fry it, and serve with BBQ sauce or ranch dressing, I can probably choke it down.

Down on the Catawba south of Charlotte there are more than a few fish camps that popped up a long time ago around Gaston County and just over the line into SC. I grew up eating salt and peppered catfish. Let me say here and now, there is nothing better in the water than catfish. You can take whatever you catch out of the ocean, trout comes close from up in the mountains, but nothing surpasses catfish

You don't have to bread it, fry it or disguise its flavor in any way. The farm raised catfish is great. We frequently cook it in a Fish Romertopf (clay pot) with lemon, a little mustard, some chives, salt and pepper.
