Oh, I also make candies, mostly different types of clusters. I have done the corn starch trick with Maraschino cherries and the frozen bananas. I don’t like doing chocolate covered fruit because it is a pain. lol And, I get more burns than with my other weird concoctions.
The cornstarch trick also works well, when making chocolates with cordial and Maraschino filled centers. :-)
OTOH...there's absolutely NOTHING worse than boiled sugar hitting your skin...re making peanut brittle, as I learned the hard way, when I was 12.
OTOH...making chocolate truffles are not difficult to master and the chance of getting burned much less! :-)
