It won't hurt you, but if you look up some facts about maize you'll find that you can't live on it as a staple (as you can with potatoes) because most of the nutrition contained just passes through. No one's saying it's unhealthy. But the Aztecs and other tribes could live on mostly tortillas and masa.

I was also brought up on (Kentucky style - meal, butter milk, baking soda, and salt baked in a greased cast iron skillet) corn bread. But we also had butter, fried chicken, fried ham and red eye gravy, greens, and potatoes to "round out" the nutrition.

Yup. Exactly the same as me. That's the setting I'm talking about.
