I agree that sushi from a reputable source is probably low risk. So is rare steak, and various other delicacies. But accidents are known to happen.

The bacterial contaminants on American beef are on the surface, so you could sear a steak and eat the center rare without worry. Once you grind the beef, the contaminants are brought into the interior, so ground beef should be cooked to 165F.
