What I don’t understand with it is why wouldn’t you just take the jewelry to make it look like a robbery if the point was to make a hit look like a random robbery?

Not a hit man myself, but it seems to be standard mo to never touch the victim or even take any evidence. Otherwise you might end up like Bill Clinton and a blue dress. Besides, no one has even seen the ‘robbery’ which had to be caught on numerous video security cameras.
