Keep in min that many Muslim women say that in their case even bondage and battery are voluntary.
I would argue that some acts are objectively wrong, Umm Bint-Anybody, it's reckless endangerment maybe, assault for sure.
The medical profession has to have some enforceable ethical standards, including that they do not intentionally mutilate patients.
There are some things you shouldn't legally be able to consent to at any age. Among these: genital mutilation, (forcible) rape, slavery, sodomy, torture, assault, murder.

I guess my point is that at the age of majority you can give informed consent.
