Our family always feels compelled to make rock structures (which are nowhere near as amazing as this artist’s) whenever we go on hikes.

Really cool, but seriously, you’re just going to sit there....wasn’t the meditating part the building of it. Just sitting there, that is just stupid, get up, make another pile of rocks, get some money for it...
Other than the Inuit, The artist who seems to have started this is Andy Goldsworthy. Andy will go to a natural area and create works of art, most of them temporary, out of whatever he could find in the area. There is a good movie about his work:
