Uh, that sounds pretty good. Do they intentionally f up the prep or something?
You take that loaf and dust it with a light crust, then you could either flash fry it in peanut oil and then a brief bake to 160F; or back of oven 350F for 45 minutes same result. The right seasoning and carmelized tomato sauce on top, you wouldn't know it wasn't hamburger...

- 10 ½ cups reduced fat milk, 2%
- 26 ¼ cups white rice, cooked
- 5 ¼ cups potatoes, grated raw, flesh and skin
- 5 ¼ carrots, grated
- 5 ¼ cabbage, shredded
- 15 ¾ cups oatmeal, dry
- 15 ¾ cups garbanzo beans, with liquid, mashed
- 1 ½ cups margarine
Ok way too much rice. 20 cups max, 1/2 white and 1/2 brown. Brown forms a slightly stronger gluten to help hold the roll together.
Make up the 6 remaining cups with a blend of seasoned soy crumbles or a dark bean - kidney or black, and some onion. And the seasoning - could go so many directions with the same base ingredients - savory, or hot, or even bbq...
Also long-chain margarine? Why? At Sysco [PDF] they could get a HDL-ish soy-based shortening for about the same. Why should food-as-punishment raise my tax rates for inmates having heart attacks because of unneeded heavily saturated trans fats in a freaking vegetable dish? Hell, if you're going to do that just serve rat poison.
Yeah, you know if you're going to f with a man's food, don't serve a half-assed vegetarian roll, just serve gruel as the stick. And maybe use an improved vegetarian roll as the carrot.

Pennsylvania state inmates are no longer being punished with the baked brown slabs known as food loaves. The loaf was a combination of beans, rice, raw potatoes, carrots, cabbage and oatmeal.
So is it baked or are the potatoes raw? Or do the prison inject the raw potatoes after the loaf is baked? Or maybe the media is just talking out of its backside again?

Hard Tack is flour and salt, and water. Baked at 250 degrees for 4 hours. It will last for years and hard as cement. Men have lived on such. Inmates are all crybabies. I have dealt with many for nearly 40 years. They are whiners.
