It’s the name. Manuka sounds more exotic than clover.

I did a search and besides price there is a difference in antibacterial qualities. Bees pollinate the manuka plant the resultant honey has chemicals that are not found in regular honey. Lots of imitators out there. Look for UMF Lic number or UMF on jar. Minimum of +10 for MG (the chemical of concern)rating

Even sugar has the same properties to a great extent, but the stickiness of Honey makes it ideal.

I has a higher viscosity because of the proteins.
