Entire State of Louisiana Loses Its Collective Mind Over ‘Healthy’ Gumbo Recipe

Sensing an opportunity to show that they can be just as angry about their classic dishes as Italians, Louisianians experienced a collective meltdown after a recipe video for “healthy” gumbo went viral. Posted by a Disney internet account, the offending video was perhaps meant to corrupt innocent youth as it attributed the recipe to Princess Tiana of the popular New Orleans–set The Princess and the Frog — giving it a veneer of legitimacy.

However, there was nothing legit about Disney’s recipe, which not only includes s*** like kale and quinoa but also removes an essential ingredient: the roux. This is like publishing a recipe for pizza without a crust. A burger without a bun! Mac and cheese, minus the mac, and with kale added. This horrific act also suggests that there is a very good chance that no one at Disney internet had ever of gumbo before, or watched reruns of Emeril Live. The internet backlash was so severe — inspiring a flurry of local press and a Twitter hashtag, #gumbostrong — that Disney actually took the video down. The world is tough, but sometimes you win, and when you do it’s important to relish the victory.

Mr D had ancestors from Opelouses but they left about 1850 for Texas.

Phonetically correct, but most Louisianans would wince at the spelling.

For those who aren't familiar with this ingredient: Handmade Filé (ground Sassafras leaves).

As has been pointed out, there are 3 methods to thicken the gumbo.
Roux, Okra or File’

I like them all and I aint a coonass!

I like the okra versions as well - but here's an updated link on the powdered stuff:

www.lionelkeyspices.com. A little goes a long way and a jar of the stuff last for years, so why not buy the version that's made the original, non-industrial way?

IMO, the roux doesn't do all the thickening - it's there for flavor and color as much as consistency. Plus, it depends on the planned ingredients as to how dark you cook the roux. A duck and andouille gumbo can take a darker roux than one with chicken, for example. The duck has a stronger flavor and doesn't "disappear" in the stronger roux.

Using file' powder has always been more of a seasoning thing in my family - and I have some of their handwritten recipes going back several generations (one is written in French). Also, seafood gumbo tends towards the Creole side of Louisiana cooking, and okra is more prevalent (file' rarely used). The chicken/game bird + sausage gumbo is more "Cajun" and tips the other way - less okra, more file'.

Damn, now I'm hungry.

We’ve been in near-drought conditions here in Atlanta.

I grow an heirloom called Alabama Red. The plant is stunning compared to any other okra variety - it’s a fiery crimson red. These are fat pods - not exactly the pickling variety.

Heirloom anything is great cuz you aren’t dependent on seed growers or retailers.

Three years ago I was going for the Guinness record for tallest okra plant. The then-record was 19+ feet tall. Mine got to 18.5 feet in height before it crapped out.
