Entire State of Louisiana Loses Its Collective Mind Over ‘Healthy’ Gumbo Recipe

Sensing an opportunity to show that they can be just as angry about their classic dishes as Italians, Louisianians experienced a collective meltdown after a recipe video for “healthy” gumbo went viral. Posted by a Disney internet account, the offending video was perhaps meant to corrupt innocent youth as it attributed the recipe to Princess Tiana of the popular New Orleans–set The Princess and the Frog — giving it a veneer of legitimacy.

However, there was nothing legit about Disney’s recipe, which not only includes s*** like kale and quinoa but also removes an essential ingredient: the roux. This is like publishing a recipe for pizza without a crust. A burger without a bun! Mac and cheese, minus the mac, and with kale added. This horrific act also suggests that there is a very good chance that no one at Disney internet had ever of gumbo before, or watched reruns of Emeril Live. The internet backlash was so severe — inspiring a flurry of local press and a Twitter hashtag, #gumbostrong — that Disney actually took the video down. The world is tough, but sometimes you win, and when you do it’s important to relish the victory.

I grew up among all three in Pointe Coupee Parish, and I know whereof I speak!

My husband is a gumbo making champ. Gumbo doesn’t have to be made with roux, which is a little bit of browned flour. Sometimes he makes a gumbo file and sometimes an okra gumbo.

He doesn’t like sausage or chicken gumbo. He always uses shrimp, crab meat and crayfish. He gave a gumbo lesson to a young relative a few weeks ago, passing it on!

Ole Justin just sounded Cajun. He warn't one, either by genetics or local culture. And neither is Emeril (who doesn't even sound Cajun).

Did you know you can buy dry roux ( no oil) in a jar from an place in Louisiana called Rajin’ Cajin’? No worry about burning the roux, perfect every time.

I love sausages. Preferably with jalapeños in them. Lol. I put them in everything. Slice them up and scramble eggs over them. They're great in homemade Mac and cheese. I made red beans and rice with sausages a couple of weeks ago. 😱

Making a roux yourself can be a little tricky and time consuming. Are you interested? If your local supermarket doesn’t carry it I’ll give you more info. They make one with oil and one without.

Gumbo is made out of whatever you have in the garden or in the stream outside your door. Add gator, crab, crawfish or fish to your list and it’s pretty complete. But it is ALWAYS started with ROUX. Otherwise it’s just some kind of PC soup and not fit for consumption in Louisiana. My coonass friends in Louisiana have to be up in arms.

Meats are of personal choice. They are all good - shrimp to sausage to chicken.

IMHO, the only true “with or without” is okra and an added footnote to that would be you traditionally use gumbo filet when you don’t include okra.

(Gumbo is Swahili for okra)

I know he was born in the Florida Parishes but he always said he lived his entire life in Cajun country. He certainly sounded Cajun, and his recipes tasted right.

Well, I guess I'm a bit of a purist....jalapenos came from Tex-Mex. Cajuns and Creoles use Tabasco. You can buy real Cajun sausage from Savoie's (they have a website and ship overnight packed in dry ice). We buy sausage once a year and freeze it.

My wife and I are both from S. Louisiana but now reside in Washington (state).

Another excellent source of almost anything "Louisiana" food-wise......CajunGrocer.com.
