American Cheese is indeed real cheese, made by combining 2 different types of cheeses {e.g. cheddar and colby or cheddar and jack). American Cheese Food, on the other hand, has additional non-cheese ingredients.

I grew up eating cheesesteaks made with American or Provolone - Whiz wasn't used back then. The first time I ever saw Whiz on a steak was back in the 80s when we stopped at Pat's en route to a Phillies game. Never saw Whiz used outside of South Philly.

I don’t know what American Cheese you’re talking about but every American Cheese I’ve ever seen has “American Cheese Food” as its ingredient.
