Another place you might want to consider (if you're open to venturing out of the South Philly or the Center City areas of the city), is "Dalessandro's Steaks" in the Roxborough section of Philadelphia.

They have great steaks and hoagies, and you might want to try their pizza steak, their cheese steak hoagie, or just a cheese steak with fried onions -- all great!

Even Dalessandro’s only offers Cheeses Whiz or American Cheese, neither one is real cheese, unless you order provolone which isn’t that good. Common, somebody’s gotta offer a real cheese that’s good like melted medium cheddar or maybe swiss, or some other good, real, melty cheese.
