There are lots of ‘reasons’. One of the big ‘reasons’ was that banking was controlled by Jews in Europe for centuries. That created envy and resentment which debtor individuals and kings used maliciously. And then there was Christian persecution - by ‘Christians’ who had obviously never opened the new testament.
Jews are the smartest people group on the planet. They tend to excel in all areas good and bad. Science and medicine, to name just two fields, would be no where near where it is today without them. But they also excel in politics and other dirty business like the movie industry. Jew haters point to the latter and ignore the former.
Ultimately - this hate comes from Satan. He hates them and he drives fool humans to hate them.
When you are kneeling before the judgement throne of God, and standing next to God is Jesus, who, hello, was a Jew, and your life is on display for all the universe to see - you probably don’t want to be seen as allied with Satan and a persecutor of God’s chosen people.

Because the Roman Catholic world made interest charging a sin called usury. Simultaneously, the monarchies under that operating system forbade Jews from several trades, occupations and crafts. Farming was out, masonry was out, medicine except for other Jews was out. Jews were excluded from huge swaths of academia.
Basically, the bigotry left them the options of opening small businesses in a few fields, and to enter banking since they were not forbidden to charge interest.
This takes you to the dangerous business of loaning money to monarchs and to the landholding and farming aristocracy. When the balance sheet is too big, a timely pogrom, expulsion, inquisition and expropriation would take place. It’s a handy way to clear the balance sheets.
It would be like us clearing our credit card and mortgage balances by killing or expelling the bankers from America.
In such a system, its easy to see why they were always attacked.
