Particularly after Putin' smashing success in Ukraine it's hard to imagine the Vietnamese or Philippine Navy taking on the Chinese.

They won’t have too. Obama already pledged support to Vietnam and the Philippines is a given. Look for China to attack some “innocent” fishing vessels and/or trade vessels. China will end up sinking a naval vessel from one of these countries and we will get dragged into it via the UN.
