OK,pepper but dont salt he meat yet then vacuum pack separately two one inch thick ribeyes. add sprigs of rosemary or horseradish puree or whatever. Set the sous vide set up for 131 F 55 C for an hour and drop em in. Go entertain your guest for an hour. Hour and a half. even two. Pull it out, dry it and then salt it and put the MAP gas torch to it for the sear. I don’t care what you made for sides and neither will you. Perfect steak. 30 to 40 seconds a side with full flame is all it takes. sweep it side to side and cover it all. dont start it right on the steak cause you can get a nasty taste from that. Propane torch is fine too as is about 20 seconds a side in a red hot cast iron pan.
