The possessive pronoun their references more than one syllabus...
It can be argued that it refers to the one and only one online for his class, but inclusion of a pea to other professors to do the same qualifies the quantification... Assumptions are made, even on my part... Nit picking, but i enjoyed his piece...

The students would be plural, the individual’s syllabus would be singular.

The way I saw that particular use of “their” was in lieu of the awkward “his or her”, using their as a (rare but accepted) singular usage of a normally (but not always) plural noun.
