Iowa polling is like a yo-yo, Trump -> Carson -> Trump -> Cruz I bet it will go back to Trump shortly. In fact I think some of the polls they over-sample some of the more evangelical areas. But I still think Trump will win Iowa, but if he doesn't its not a big deal, he will get NH and then SC and the Trump Train will have unstoppable momentum.
