Good cheese = 10 year old white Vermont Cheddar, a really dry smoked Gouda, any rock hard parmesean or romano, locetelli, along with a good dry cured tender pork salami and a glass of hearty red wine and bread.

The article is discussing “processed cheese,” not the real fermented and aged dairy. Maybe it’s because I lived in the Netherlands for fifteen years that I noticed. What most Americas call “cheese,” is not. Most highly processed pseudo foodstuffs are addictive by design so as to keep the consumer purchasing.

I don’t know if I’m addicted and it is unlikely I’ll ever find out because I eat some form of cheese in almost every meal I eat and don’t plan to quit!
