Cool thing about mahi mahi is that when a passenger catches one there are usually one or two more that will follow it up to the boat, within gaffing range, out of curiosity/stupidity and can be easily landed.

Beautiful fish while they're still in the water but they fade fast once landed. If properly prepared they can be made to taste like pompano.
