I am white. I will tear up some ham hocks and beans. I can also pick a chicken clean. I’ve been known to devour a lot of watermelon too!
But I’m not going near chitlins (chitterlings).

I tried chitlins once before I knew what was in them, I ate no more than a tiny bite.
I immediately realized that this was not something that should ever be eaten.
