I like to debone the bird and run it through a meat grinder. I then mince onion, celery, yellow pepper, and mix the whole works with Miracle Whip and a touch of mustard. A splendid sandwich filler if ever there was one!

The bones etc I toss in a pot and simmer for several hours to make stock which I freeze for soup, or gravy for the next bird.

It is! I put it in a pita or sometimes just have it as a side (with extra pepper on top). We have a family member who takes the bones and does turkey soup every year.
