Which is not far removed from hijacking.

You are right! This woman's antics hijacked an entire flight. Her juvenile, entitlement based, narcissistic behavior put the crew and passengers at risk, and a loss of income.

I wonder if individuals could sue her on lost time alone? If someone misses their connection flights, or an important meeting, to to a woman's "hissy fit", I wonder if she puts herself at legal (civil judgement) jeopardy? That is, of course, to be considered IF the airline(s) didn't make it right.

Maybe class action lawsuits against an individual would stop this nonsensical behavior?

I wonder if she puts herself at legal jeopardy?

"she demanded that the flight land at the nearest airport"
(take me to Palm Beach!!)
"She said something to the fact that 'I don't care about the consequences, put this plane down now"

The more I think about it, the more it really does sound like hijacking. Well kitten, here are the consequences.
