I think that is different. In that case, they are using as a tool to prepare the ice cream, not an ingredient to be served in it.

LIQUID NITROGEN: It is SMITTEN'S Ice Cream in the Hayes Valley area of San Francisco.
You can call them and the guy (really friendly and nice guy) who sells it can tell you ALL ABOUT the liquid nitrogen. It keeps the ice cream cold.
