To: Battle Axe
I love duck (particularly in a Chinese restaurant), but it is difficult to cook (at least it is for me).

I tried to cook it once and absolutely ruined it.

I cook duck on the grill rotisserie. Prick the skin all over until you are tired, then keep on pricking the skin. Keep a roasting pan under the rotisserie to catch the fat drippings. It makes wicked good gravy.
