Also, tips can make you get $50/hour.
When I waited tables the paycheck was like a bonus. I’d go home with $100 or so every shift (many years ago). When I got a paycheck every two weeks it was like extra pay.
A good waitress gets $25/50 an hour, at least, unless it’s really slow, and it is not high skilled work, although it is physical and requires some good social skills and presence of mind.
When I do payroll accounting I get $25 and hour and it is far more skilled than waiting tables.

Absolutely. When I waited tables the average price for a person was $15/20 with wine and all. So a four top, I’d get maybe a $15 tip.

My son waited tables at Steak&Shake and made $100 per day on week ends. Not too bad for a 14 year old in 1988.
A couple weeks back, my wife and were in a restaurant for breakfast and the waitress was high as a kite. When the food came, we still had no silver ware. She said, "oh, I've never done that before". As we were finishing eating we heard her use the exact words to a couple who were just getting their food. "Oh, I've never done that before" - concerning a lack of silver ware.
This is not true. Some places tip pool when they don’t do assigned tables.
But the IRS does not require it.
In general waiters suck, waitresses are better.

The 8% rule came about in the 1980’s tax reform. And that was also when most tips, if not all, were in cash.
Now most tips are ‘charged tips’ left on credit cards. If a business pays out the charge tip in cash to the server they must report it since it came from their till.
Or they can pay them their charge tips through the payroll system. This concept took years after charge tips became more widely used because the servers were used to daily cash.
When our hotel company made it a policy to put them on paychecks instead of cash payouts, the old timers whined but got over it.
We also successfully explained to them that if they don’t report, their money won’t get counted as income earned by Social Security and they’ll get little or nothing when they draw it later. (Yes, I know none of us will probably get anything and I’m 53).
I’ve done hotel accounting for 30 years and my wife is an executive at the third largest payroll processing company in the country. I could literally talk this issue to death! lol
If I can’t afford to leave a 20% tip, I don’t walk in. That’s assuming very good service, though. Sometimes the kitchen screws up and it isn’t the waiters fault, but that fact won’t reheat my dinner. But usually a good personality can make up for small errors. 20% is the norm around here.
