But, if manslaughter is on the list of charges, you can be not guilty for 2nd-degree murder, but guilty of manslaughter.

Can a defendant be charged with both 2nd-degree murder and manslaughter at the same time if only one person is dead as a result of the incident?

Yes. Unless the defense makes a tactical decision to oppose the lesser charges.
