Good points. But it does not matter what’s “officially preferred” in some document, if it rarely actually happens in a church. EWTN’s mass nicely incorporates many of the parts you mention. Yesterday the priest also sang the Gospel. Of course, they do have outstanding musicians.
I'm not saying those barriers are always easy to break down, but they can be broken. Really all you need ate a group of laypeople who are motivated and a pastor willing to step out and take the risk.
EWTN sings chant ordinaries, but they don't chant the propers (unless they've changed recently). I think they should.
