When I was a Kid I was taught to be polite and address Nuns as “Sister”, even if they were just walking by us on the street.

Same here. I was raised in a nominally Lutheran family and us kids were always very respectful of nuns. We still are, though the local "hippie nuns" don't generate a whole lot of empathy.

My folks were WWII generation and they made it policy to respect anyone of the cloth. In reflection, I suspect it was because they didn’t care whether it was a priest, rabbi, minister, or other type - when in the foxhole about to charge the enemy, any representative will be most welcome.
